Looking around for different viewpoints... :)

How would you interpret a Kite formation including Sun & Mercury in Aquarius (11th), Pluto in Libra (7th, almost conjunct DSC), Jupiter in Gemini (3rd) opposed by Neptune in Sagittarius (9th) in composite chart? I get that Neptune becomes the focal point, that a kite seems to have more "determination" than most Grand Trines do, but in the case of the relationship, I'm having a hard time grasping the large meaning...

Well Kites are not as stable as a trine, being that they introduce a new element (in this case fire), but at least the element are complementary. The oppositon, in my view, allows the inherent laziness of the Grand Trine more expression and movement.

Normally I say the opposition planet gives the aspect clarity, but when it's Neptune there, hmmm . . .

I would say that Neptune in Sag emphasizes the desire of a Sun/Nep opposition to resist domination. With Mercury, perhaps they resist entering into relationships with others, and live more in their head (signature of an air trine). This could lead to being taken advantage of VERY easily. It would be good for this person to recognize their own gifts and stop being so damn self-sacrificing. They need to know what they really want to do. I could see them being involved with children (Jupiter trine), for their vitality and because both this perosn and kids tend to be optimistic overall.

Does that jive with the rest of the chart?

A little, but it's a composite chart, not a natal chart. :) One thing I read is that as a relationship, they might tend to over-idealize things and not face reality, and of course noone wants to think they're going to have a dream that has a rude awakening.
