I have a problem with excess saliva production during meditation. It breaks my "concentration." I've tried closing my lips, but at this time of year, it's a chore to get any air through the nose. Does anyone know how to remedy this dilemma?

Here's a great site on meditation. This person says that your mind will try to distract you from meditation. Sounds to me like that's what's going on here.

saliva production is usually a physical response to food or the
expectation of food.
Do you drool(crude term) when you sleep? If not then it is a
timing thing possibly.
I would try meditating in the morning after awakening unless
you are a big breakfast person.
As for meditating when you NEED to, that one could be tougher.
Sometimes you just gotta meditate! Chin down, eyes closed?LOL

You could tie a sponge to your chin... just don't leave the house with it on... ;)

I would say that your mind is trying to distract you somehow.
