Leave it to about.com to know everything.
If you aren't vegan then beef and pork dishes are appropriate since it is time for the slaughter. Making jerky can be a fun project to start the day after. Chicken and fish are fine, but not so much related to the season.
Molasses can also be meaningful - blood of a tree.
If there's a party, throwing in some Mexican Days of the Dead recipes (Nov 1,2) can also be fun. Here's some Bread of the Dead - shaped like bones or skulls.

Sugar skulls are complicated. But if you are skilled then go for it!

Since Samhain has a lot to do with ansestors, I always like to make things that my ansestors loved when they were alive. I usually have a dumb supper as well. It turns out nicely.

What is a dumb supper exactly? I've heard of the term but never knew what it meant.

Well, it's a solemn affair. You invite your ansestors to join you and you make out two plates of food, one for yourself and one for the ansestor. Then you eat yours and commune with your ansestors. Never eat their food and just throw it away after your through with the supper. But traditionally, no one talks once the dumb supper starts.

i celebrate samhain with my coven mates, we always make dishes that our ancestors made as well. I really enjoy doing that, then I'm conciously thinking about them all through the preparation of the meal as well as the ritual. very spiritual experience for me.
yay samhain!
I have to decide what to make this year! hmm....
