Today's one of the nastiest, coldest, rainiest days we've had in quite a while, but my roomie and I are compensating by making homemade meatball soup and fresh baked white bread rolls.

It's just been such a long time since I've really taken the time to just COOK. It feels so nice to know that my rolls are rising and I'm just hanging out reading. I love cooking :)

I love when I take the time to cook/bake something and it turns out the way I want it to lmao. Good for you for doing it.

I have spent the day doing the same thing :). I made some homemade cutout cookies for halloween.

Everyday cooking is one of the nicer ways to wind down after a full day. Everyone has a job to do and we talk as we work.
You reminded me of "potato soup" day. The entire family of 50+ gathers at the house and Grandma barks out a grocery list. We all buy something for the meal, Granny guards the stove and as the ingredients arrive she adds them until it's dinner time. I just need to get my hands on a bigger soup pot, an industrial, washing machine size soup kettle.
Maybe one of those giant cauldrons, that'd give the old lady a giggle.

i made the best soup yesterday! I like to use extra veggies (sweet potato; carrot;etc) and an extra piece of oat bread to make it thicker...mmmm, and extra cheese! and i don't like to use sage but that's just me. here's the recipe, you should ALL try it.

Smoky Pumpkin Soup - Recipe

Simple Solution
This is one of our favorite soup recipes ever, combining the beta-carotene-rich nourishment of pumpkin with a delightful Autumn smokiness, a recipe that grew out of a soup shared with friends at a cozy fireside lunch in a nearby Colonial inn.

Outdoors, the weather may be cold and blustery, but this flavorful, creamy soup will warm your bodies and your souls!

INGREDIENTS

3 tablespoons butter, margarine, or olive oil
1 medium onion, chopped
2-3 garlic cloves, minced
1 small to medium carrot, sliced in 1/2-inch rounds
1/2 cup well-scrubbed sweet potato, cut into chunks
6 cups vegetable broth
1 cup pumpkin puree (or 1 cup chopped raw pumpkin)
1 slice oat bread, torn into pieces (this adds body and oaty nourishment. If oat bread is unavailable, substitute whole wheat and add 1 tablespoon rolled oats)
1 teaspoon dried thyme
1 teaspoon crumbled dried sage
1/2 cup light cream or half-and-half (vegans may substitute soy milk or 2 tablespoons cashew or almond butter for a creamy texture)
1/2 cup smoked gouda cheese, grated (this is what gives the soup its delightful smoky flavor; vegans may use a few drops of natural smoke flavoring instead)
1/4 cup chopped fresh parsley

Suggested toppings (optional):
Dollop of sour cream, whipped cream, or crème fraiche
Grating of fresh nutmeg or a pinch of dried sage or thyme
Sprinkling of cayenne
Spoonful of raw or toasted pumpkin seeds

1. In a large soup pot, heat the butter on medium. When the butter is melted, add onion, garlic, carrot, and sweet potato. Saute the vegetables, stirring to coat with butter, for a few minutes, until the onion is translucent.

2. Add the vegetable broth, pumpkin puree, oat bread, thyme, and sage. Stir to mix thoroughly, bring to a boil, then reduce heat, cover, and simmer until the sweet potato is tender, about 30 minutes.

3. Add the light cream, cheese, and parsley. Stir to mix and continue to simmer (do not boil) until the cheese is melted.

4. Puree in batches in your blender or food processor, adding more cream to thin, if needed.

5. Serve warm in individual bowls with a combination of any of the suggested toppings.

Serves 6.

Mmmm... Tasty sounding soup recipe! One of my personal favorites is as follows:

Curry carrot soup with wasabi cream.

-about 5 cups (2-3 cartons) of broth (chicken or veggie, not beef)
-1 onion minced
-About 1 tbsp butter
-1 tbsp minced ginger
-about 3 cloves garlic minced
-2 stalks celery chopped
-1 lb carrots chopped
-2 small handfuls pine nuts
-Curry powder to taste
-a dash of cardamom powder
-A dash of nutmeg powder
-Salt, pepper, and garlic powder to taste
-sour cream
-wasabi powder

1. Sautee minced onion, minced garlic, minced ginger using butter
2. Add in broth, and chopped carrots, and spices.
3. Simmer on medium for about 15-20 minutes or until carrots are soft.
4. Run soup through a food processer until it is thick and creamy.
5. Serve into bowls.
6. In a separate bowl, add wasabi powder to taste to sour cream.
7. Garnish individual bowls of soup with sour cream.

It's a great recipe for a cold and blundery day.

Food is a HUGE part of my life and I just love it when the weather gets that chill and all you want is a big pot of stew or soup to warm the cockles. I hope you enjoyed your day and your meal, it sounded like the perfect day.

I love it when I have the time to really make something good, too. The last few weekends by me were kind of chilly, so I made soups both weekends. They both turned out fantastic! Now I'm just waiting for it to get chilly again...
