Since I'm a user of the Placidus house system I know it's quite common for interceptions to occur in charts. I've read some astrologers believe an interception portends trouble for the ruler of the intercepted sign. Others think that the house which holds the interception is more powerful. Can it can also be said that sometimes, with an interception, you are more attracted to people born under the subsumed sign? Or, intstead, what about yourself showing those attributes more strongly than you might otherwise?

as with most things in astrology, some use it, some don't.
i myself use interceptions occationally, mostly when there is a personal planet or a candent house or cardnial sign involved. that's where the most dynamic energy is and where the interception will show stronger... or at the very least, it's where others are going to point it out to the native.
now, i've never heard about the 'being attracted to that sign' thing. attraction is really something that falls in the majority domain of mars, venus, and the 5th and 7th houses. i have seen charts where the interception was within the 1st and 7th house, usually it shows an imbalance between the natives' self expression and his/her partner's... but it always shows up elsewhere in the chart as well.

The 1st and 7th house - that's where my interceptions happen. Aquarius is in the 1st and Leo in the 7th. My Sun is in the 4th and Uranus is in the 11th.

I'm of the 'house containing is more powerful' group - just been my limited experience.
Like an unaspected planet, an intercepted sign seems to have to work harder to express itself. The house that contains the signs shows where we have to work to allow that sign's energy to come out. I've heard that the ruler's of said house/sign could allow the energy to escape as well.
An intercepted first house sign is a fundamental part of one's personality (1st being the AC on the angle). Aquarius there says to me that you may find it difficult to expressing your rebellious side appropriately. It's like that Aquarian energy builds (esp. since you have no planets in that sign) until it HAS to come out. And on the opposite side, Leo energy in the 7th shows that you have difficulty getting noticed in relationships.
Also look to the duplicated signs (those that fall on two cusps) for further insight. They offer a way through the trouble of the intercepted sign.
