this is the one we use and everyone loves it
Soft Gingerbread Cake Recipe
1 cup butter
1 cup molasses
1 cup brown sugar
4 eggs
1 cup sour milk
1 teaspoon baking soda
3 cups flour
1 tablespoon ginger
1 tablespoon cinnamon
1 tablespoon ground clove
Preheat oven to 350º. Butter and lightly flour two 9-inch cake pans. Separate eggs. Beat yolks with mixer, set aside. Cream together butter, molasses and sugar. Stir in yolks and a little flour. Dissolve baking soda in sour milk and add to mixture, stir. Add egg whites and remaining ingredients. Blend until smooth. Pour into pans and bake for45-55 minutes, or until a toothpick comes out clean. Serve with whipped cream
