View Full Version : What to do with egg whites?

I have somewhere between 40 and 50 of the little devils in my freezer (frozen in batches of 5, 10 and 20) and I have no idea what to do with them.


I thought Meringue! But my oven is broken, and really, 50 eggwhites? there is only so much meringue a girl can take :lol:

I've had a few suggestions, like massive eggwhite omlettes (not a big omlette fan, and eggwhites are pretty tasteless IMO) topavlovas for all the friends and family (but that needs an oven, and i'm short an oven!)

I figured i could use a bit for clarifying stock, but yeah, i'm at a bit of a loss really.


BTW, the yolks have all gone into ice cream :) 5 yolks per litre. eek!

Lol - I used to be a member of a mother's site, apparently egg whites work wonders for conceiving if used as a lubricant!! (but I am guessing that wasn't the kind of usage you were referring to?)

Um... Pavalova?

I found this recipe on allrecipes. com:

Egg White Sugar Molds
"The egg whites in this recipe make for a stronger mixture that will hold together better. "
Original recipe yield: 2 large or 10 small eggs.
Prep Time:5 MinutesCook Time:20 MinutesReady In:25 MinutesServings:20
INGREDIENTS:
2 tablespoons cornstarch
5 pounds white sugar
2 egg whites

DIRECTIONS:
Preheat oven to 200 degrees F (93 degrees C). Dust egg molds with cornstarch.
Place sugar in a large bowl, stir to get rid of lumps. Make a well in the center and pour in egg whites. Mix and knead with hands 5 minutes, until well blended.
Press firmly into mold with the heel of your hand. Scrape off excess sugar with the straight edge of a knife. Unmold at once and place on baking sheets.
Bake in preheated oven 20 minutes, until hard.

Egg-White French Toast Recipe #4667
1 cup 2% low-fat milk
8 slices bread, or 4 1-inch slices of bread cut from a loaf
1/8 teaspoon cinnamon
4 egg whites
1/2 teaspoon vanilla extract

4 servings

In medium bowl beat egg whites well. Add milk, vanilla and cinnamon to egg whites and continue to beat.
Dip bread slices into batter and coat on both sides.
Cook one of the following ways: Place dipped bread in greased and heated skillet. Cook by turning a few times to brown.
Or, place dipped bread on greased or oiled baking sheet. Then broil in the oven (watching closely), turning only once. (Approximately 2-3 minutes each side when placed 5 inches from broiler top).


Egg White Oatmeal Pancake With Peanut Butter and Banana Recipe #125080
This is a great healthy breakfast that can be made quickly and enjoyed pre- or post-workout. Protein, complex carbs, good fat, and fruit! I eat either half or whole pancake. Add more or less peanut butter or banana, depending on taste. Keeps my energy level high all morning long!!
6 egg whites
1 teaspoon cinnamon
1/2 teaspoon Splenda sugar substitute
1/4 cup oatmeal
4 teaspoons peanut butter
1/2 banana

1-2 servings Change size or US/metric
Change to: servings US Metric

8 minutes 3 mins prep

Whisk egg whites, cinnamon, and Splenda together in bowl.
Pour egg mixture into lightly greased medium nonstick skillet. Immediately sprinkle raw oatmeal on top of eggs. Let cook several minutes to set. When fairly firm, flip pancake, cook 2 minutes or until oatmeal side is browned.
Transfer to plate, oatmeal side up. Spread peanut butter right onto oatmeal, top with sliced banana.

Thaw them and rub them on your face and let set until they are dry. It is a wonderful facial mask for getting rid of wrinkles! You only need one for this.

You will be amazed at the results.

That's what I was gonna say! Use them for a face mask to help tighten up pores. Also you could mix some with mayonaise for your hair. The eggs(for protien to help strengthen) and the mayo(for moisture,a conditioner of sorts).

I've just thought of something else you can do with egg whites:

When you want to decorate something - for example a cake to celebrate spring, take fresh flowers such as rose petals, rosemary sprigs, cranberries or any berries etc, mint leaves or any edible herb leaves. You paint them with egg white and then sprinkle them with fine caster sugar. They look really cool crystalised on the top of a cake and you will not have to reveal how easy they are!

You can use them as the glaze to candy nuts... you can insert any type of nut for the walnuts below.

Candied Walnuts

Ingredients:

Large egg white at room temperature
1 tsp. water
2 cups walnut halves
1/2 cup sugar
1 tsp. cinnamon
1/2 tsp. allspice

Preparation:

Preheat the oven to 250-degrees. Line a cookie sheet with foil. In a large bowl, whisk together egg white and water until stiff and foamy. Add walnuts and toss to coat. Pour nuts in a colander to drain for 3 minutes if necessary. Wipe out the bowl, add the sugar and spices. Mix well and add the walnuts and toss to coat.

Spread nuts in one layer on a baking sheet. Stir every 15 minutes for approximately 1 hour. Let cool and store in an airtight container.
