I'm headed off to a LAN this w/end with a few friend and friends of friends and well, you get the idea :)
I put myself down for cupcakes.
Does anyone have any recipes for honey or maple flavoured cakes? I have a reasonable selection of general cupcake recipes, but that flavour is missing and I think its needed :)
Other recipes would be wonderful also, preferably those that taste better the day after, as i'll be cooking all Friday :)

I think this could be adapted for cupcakes(you might not need as much frosting, but then who minds extra frosting?):
Creamy Maple Nut Cake
1/2 C butter 2 C Flour
1 1/4 C Brown sugar 1 Tbsp baking powder
2 eggs 1/2 tsp salt
1 tsp vanilla 1 C milk
Cream butter, add brown sugar gradually. Stir in eggs one at a time then add vanilla. Blend dry ingredients together in seperate bowl, then add to butter mixtures, alternating with milk. Divide batter into two round pans and bake 30 - 35 mins. When baked and cooled, cut each circle in half to make 4 layers and then frost:
Maple frosting
1 8 oz package cream cheese at room temperature. I cup maple syrup. Beat cream cheese five minutes, then gradually add maple syrup. Top with pecan chunks.

i have a maple icing recipe:
2 cups maple syrup
2 egg whites
1/2 teaspoon baking powder
boil syrup until it will spin a thread.beat whites of eggs until stiff.add the syrup slowly,beating constantly.beat until frosting becomes cold and thick enough to hold its shape,adding the baking powder during the last part of the beating.

Honey and poppy seed cake-
6oz butter softened
8 oz honey
8 oz wholewheat flour
1 teaspoon baking powder
1 taespoon cinnamon
2 eggs beaten
2 tablespoons poppy seeds
2 oz walnuts chopped
butter for greasing a 2lb loaf tin
preheat 350F
beat the butter to a cream.beat in the honey.toss the flour with the baking powder and cinnamon.add it to the butter,alternately with the eggs.fold in the poppy seeds and walnuts.bake for 40 minutes.cool in tin for 5 minutes and turn on rack to cool completely.
