I have a hard time eating healthy as it is... so I'm always up for quick, easy meals and snacks. It's important both during and after pregnancy, as ya'll know.
Unfortunately, my options seem to be limited, and I get bored with a lot of the things that I eat on a regular basis and develop quite an aversion to them.
Does anyone have any suggestions for snacks/meals that are healthy and easy, that might add some variety as well as nutrition? :)

Hummus is good and if you cut up a bunch of veggies all at once, you are more likely to dip them in it that the more convenient pretzels, pitas or breadsticks. In fact, cut up veggins on a plate in the fridge will get you eating more of them even without a dip for them. Yogurt is good for your calcium and easy to grab and go - buy plastic spoons and you will take it more often, or if you wanna be enviromentally friendly, eat the yogurt with a breadstick.
Cream cheese and bagels are good too. Buy lots of fruit and put it in a pretty bowl on the table - you will eat it! Or for fruit that needs cutting up, make a plate and put it on the table when you are home for grazing and in the fridge when you arent.
For quick meals I like pasta and different sauces. Use your crockpot - Flylady has TONS of quick recipes on her website under "food for thought" and its so nice to come home when the house smells like dinner already.

Try some mixed nuts or single type nuts...like walnuts, pecans, peanuts, cashews etc..

I find peanut butter on toast is a yummy treat...especially cuz the warmth from the toast makes the peanut butter all melty...yummy..yummy!!

I would say the best thing is to prepare some things ahead that u can eat for a few days after wards.. like Rice, Pasta, Salad, Skinless chicken.

OMG, I have to cook?! 8O
(Kidding)
I just don't like to cook...
And I'm not a big fan of "leftovers" which is what pre-cooked things always taste like to me. (Yeah... I'm a weird picky eater. :p Forgot to mention that didn't I? )
