I'm a vegetarian, but the thing is, I'm at school during lunch so its hard to make something that I can take with me. Does anyone know of any packable, meat-free lunch ideas?

Gee, when I was in school, we used to *dream* of having meat in our school lunch. Especially in the burgers.

Really though, maybe you could make some nice veggie soup and take it in a thermos. I've been known to put a tossed salad in a sealable container and take the dressing in a separate cup.

How about PBJ sandwiches? Or some kind of pasta in a tupperware container?

If you're looking for pre-packaged meals, I'm not too familiar with veggie versions, but there are lots of possibilities if you make you own - just invest in some good containers.

I also think PBJ sandwiches are a good quick portable meatless lunch. For pasta, try perogies. They can be made in roughly 3 minutes and are very portable, as is any pasta. There are many things you can bring.

Why is it difficult to bring a lunch with you? I don't understand.

I love pita's and wraps. Its almost impossible to get sick of them because you can mix it up. Like put a ceaser salad on a wrap YUMMERS! :mmm: Or take some soup! :hahugh:

hummus and pretzels is one of our faves. I also like to mash black beans with lime juice, garlic powder and cumin and serve with nacho chips and cheese. Yogurt is a great source of protein and you can freeze it so it defrosts by the time lunch rolls around. nuts are a good meat alternative and they dont require any heroic measures to keep them from spoiling.

Me, too! Yep, pita sandwiches are very good for vegetarians. Include some type of spread, cucumber slices, and sprouts.

I don't knowif you eat eggs or cheese, but often I take egg salad, or cheese sandwiches. Also, sometimes I take feta, and dry tomatoes and a few black olives, through them in the blender.. and it becomes feta cheese dip to be had with crackers. Also, a old sandby for me is Pad Thai... that's a package of ramen noodles cooked , a dollop of peanutbutter, a few hot chillis (or chili paste, or flakes) and a little soysauce. mix it all up, it will stick to your ribs and is nice and spicy. I also used to get those soups in a cup you just add hot water too. Lentil and split pea are awesome. Since I'm mostly vegetarian, last night's dinner often ends up in my lunch.. scalloped potatoes, leftover rice with some fried egg and vegies thrown in, dal, vegi lasagna, greek salad with lots of cheese. I try to use all lowfat cheeses, cause... I love cheese and it loves my butt. When I lived in the US I also did enjoy the ocassaional MTO sub from the local gas station or SUBWAY

Lightlife makes great fake bologna, ham, etc. for sandwiches and would last until lunch time. Make a BLT (bacon, lettuce, tomato) with Morningstar bacon, make a salad or a pita with those fake steak strips by Morningstar as well.
