Dry Ingredients
1 ½ cups plain flour
1 tsp baking powder
1 tsp baking soda
½ cup raw sugar
Wet Ingredients
½ cup soy milk
¼ cup canola oil
3-4 tbsp melted margarine
1/8 cup golden or maple syrup
2 tsp vanilla extract
1 banana (very thinly sliced)
1. Preheat oven to 225 degrees celcius, lightly grease pan.
2. Sift together dry ingredients, make a well in the center of the bowl, set aside.
3. Mix together wet ingredients, add sliced bananas, and add these to the dry ingredients.
4. Do not overmix the batter, mix until no trace of flour is left. If the batter seems too dry, add soy milk little by little (about 1 tbsp at a time) until the batter just moist.
6. Put it in the oven and let it bake for about 40 minutes - check on it frequently as this cake browns very quickly. Since it is meant to have a crunchy top, watch it closely that it doesn’t burn.

EDIT: Preheat the oven to 225 degrees celcius, but turn it down to about 170 or so when you put the cake in there... (Wildchild, I hope this mistake didn't burn your cake! 8O )
