Fish-when cooking, add lemon juice- it makes it so your house doesn't smell like a wharf after frying or baking any kind of fish.

Salmon-
melt some butter in the skillet before broiling, add a little lemon juice to both sides of the uncooked fish pieces. after cooking partially, add dried or fresh rosemary leaves (sprinkle them on and around), cover the skillet so the salmon steams the rest of the way with the rosemary. This is TO DIE FOR....
as a variation, add thin orange slices on top before steaming and use sage and/or rosemary. also EXCELLENT....


it is a pity i don't write down most of my recipes... i don't even go by a recipe for baking! I'll look for the ones I HAVE written down...

I like to do my fish in a white wine or a rose. Some onions across the top and yummmm :)

:) Thanks for this, Bryony. Usually I'm the one to cook the fish and I'm always noticing that icky fishy smell, but not sure what to do about it (it's much better than the deep frier though. :o)
