Just thought I post a thread and see what everybody's planning for the up and coming sabbat dinner celebration.

It's Yule in Oz.

So, I'm planning the following:

Chicken and Vegie Pie
Roasted Apples and Icecream

It's the Summer Solstice up here. I'm planning a picnic for the hubs and I, with salad and fruit. We're going down to the park a couple blocks from my house, and going to spend the afternoon just enjoying nature and each other.

I'm trying to get a bar-b-que going for the family for the Solstice. Not sure if I can get everyone together though :ugh:

Hmmm Chicken Pie sounds nice, I might make one also.
Not sure about desert will figure that out when i go to market on Wednesday.

Winter here... and also hubby's B-day

Lamb/goat roast with roasted vegies (pumpkin, carrot, parsnip, onions and potatoes)
gravy
green beans
homemade bread

Summer Solstice for us. I'm going to make ham'n'cheese filling for sandwiches, and either a key lime pie or a lemonade cake. Our hostess is making potato salad and deviled eggs. Haven't heard what the others are bringing but we're keeping it light and cool, salad kind of things.

Tanya, if I had the ingrediants on hand, I'd make bread also. Might just settle for a crusty loaf of bread from the supermarket.

Lumberjack Cake

Ingredients

Cake

2 large "Granny Smith" apples (or good cooking apples)
1 cup chopped dates
1 teaspoon bicarbonate of soda
1 cup boiling water
125g butter
1 teaspoon vanilla essence
1 cup sugar
1 egg
1½ cups plain flour
Topping

60g butter
½ cup brown sugar
¼ cup cream
¾ cup shredded coconut
Method

Finely chop and combine apples and dates, mix in bicarb soda and boiling water cover and let stand.
Grease deep 19cm cake pan, line with paper. (if you are using a shallower tin ensure that the paper on the side rises above the top of the pan.)
Beat butter, sugar and vanilla essence in a large bowl with an electric mixer until light and creamy. Add egg and beat until combined. With a wooden spoon, alternatively blend in parts of the apple date mixture and flour. Pour into prepared pan and bake in a moderate oven for 50 minutes. Pour topping over the top of cake and sprinckle top with additional coconut. Return to oven and cook for a further 30 minutes. Topping should be golden brown and caramelised. Allow to cool in pan.
Topping

Combine butter, sugar, cream and most of the coconut in a pot. stir over a low heat until butter is melted and ingrediants combined.

basically what I'ld call poor man's cake with a coconut topping

my hubby's favorite.

Sounds good, except for the coconut to which I'm allergic.

Question... is bicarbonate of soda the same thing as baking soda?

Guess I could do a google, eh?

If it's an Aussie thing, why not make Damper? :lol:

One of these days, I'm planning on doing just that. Maybe for Lammas though.

Also the Summer Solstice here. I'm going to be making beef fajitas (with lots of red, yellow, and orange bell peppers!) for supper.

We're picnicking tomorrow - DH is supposed to be picking the spot. Someplace with a grill.

Appetizer will be an avacado and yogurt dip with baked wheat pita chips.

For our entree, we'll have grilled eggplant and artichokes with grilled lemons to squeeze over them.

For dessert, blackberries in mint tea syrup topped with yogurt.

MMMmmmm....

I'm grilling some chicken,not sure how just yet,maybe kabobs with some fresh veggies and pineapple.I had my kids gather mulberries from the tree out back and made a mulberry pie.I also made some herbal lemon cookies...though the name was kind of misleading with the ingredients.It's more like a sugar cookie with lemon balm in it.They are very yummy though and I was pleased with the outcome :smile:
