Okay, so it's not technically today.. but oh well.
Hubby and I are having our first Thanksgiving today. This is because on the day of Thanksgiving.. we have 2 places to go.. hence 2 big, lavish turkey dinners. We figure, we can have ours a little over a week in advance.. and we'd run out of leftovers by then. ;)
But.. we have a 14-pound turkey. It was the smallest whole turkey we could find! We're going to buy one can of cranberry sauce (love that stuff.. better than the homemade ;)), some fresh sage and rosemary.. and a few other things. It's not going to be anything huge. Just mashed taters, turkey, stuffing (not cooked in turkey), corn, cranberry sauce, and maybe a pumpkin pie. Og course, we won't be making a ton of each thing, either.
We're eagre to get started as we'd watching "Romancing the Bird" on FoodTV.. ah.. Good Eats with Alton Brown. My favourite show in the whole wide worlds! That's where we got some turkey tips!
1) Bake it on 2 temps. First at 500 degrees for 30 mins. (this promotes browning) then at 350 for about 90 mins.
2) Put a tin breast plate over the turkey breast! The dark meat takes a little longer to cook and it won't leave the white meat all dry.
3) Bathe it in a brine! Veggie stock, salt, brown sugar, and ice. Leave it there for 6 hours, turning it over halfway through. That'll keep it tender and juicy!
4) Bake it in a shallow pan. That way, there won't be creases, and it'll promote browning.
There's more, but then why would you go to FoodTV's website? That's our turkey! He suggests putting apples, onions, and cinnamon in the bird with the sage and rosemary.. but I'm not too sure about that.
Boy am I long-winded this morning! I guess I'm just so excited about a whole day of cooking with hubby. :D
