This might sound like a really stupid question but we've had rain/cloud cover for the last few weeks n it's a full moon tonight but what happens if the clouds don't move? Can I still carry on with my ritual?

You don't have to be able to see the moon to know it's there...

Agreed. Mental imaging is a great thing. I have lunch time sun rituals in my office quite often. Usually in a quiet library without a window in sight. Like Dr frankenfurter said " If you can dream it you can be it."

I usually wait until it is a clear night, but this is because of how I work with Moon Spirit. Some of the rituals in my Path cannot be done without direct moonlight. There is a 3-day window of full moon, so usually somewhere in that time you will get a clear day. If it is a little bit off, it doesn't much matter to me.

I would think yes. The moon is still there, still full, even though you can't see it. Just like the stars are still there, even if you can't see them with light pollution. Unless your ritual requires you to see the moon with your own eyes, than it should be perfectly fine to proceed. Not everyone lives where there's clear skies and good weather. I don't do full moon rituals, but if I did, it'd be impossible at times living in Washington-- we get a lot of overcast in the cooler months. In that case, I'd have to do them with cloudy skies.
