The newest issue of Renaissance Magazine has a lot on period themed weddings, so you might want to pick it up.
Otherwise, it depends on what she wants - does she want soemthing that is truly in a medieval style, based on folk customs, does she want a Ren Fest like fantasy wedding, is she having one that is primarily Christian? Jewish? Pagan? Totally civil?
Does she want to do medieval food or just serve it in a medieval style?
I'll be happy to help, but it helps to know specifics, and it helps to know what she means by "medieval" - if it's historical or fantasy based, of if she really means "Renaissance" or "Cavalier" or something.
If, for example, she is involved in something like the Society for Creative Anachronism or she's a history scholar, she will probably be more concerned with authenticity than otherwise. (On that note, check out www.SCA.org for a local group in your area, who may be really helpful).

Another solution is in Las Vegas, they have weddings there at a castle like setting and everything.. a couple of friends got married there... it was affordable and fun.
otherwise, yeah, any question on this kinda stuff and we will find a dozen solutions. I really like planing fun stuff... :) just as long as I don't need to do the work. :D
