Hi all, not sure if this is the right spot to post this, but I have a recipie and a book to recommend to everyone.
The book is called "Hocus Pocus Magical Cookbook" by Donna Boundy. It's a family oriented cookbook. On the bottom the caption reads "For wizards & kids". I just received it on Friday for my b-day from my best friend. I flipped through real quick and they are all easy to follow (and fun too) for the kiddies and parents alike. Didn't get to try it out this weekend, my son was away all weekend with his Dad. But we're gonna try some stuff for next week.
Also, I have a recipie that I've now tested on my friends 2x. They seem to like it. It's called "Tortellini Summer Salad" I got it out of my Witches 2001 Datebook (another gift from my Mom) they give credit to Breid Foxsong
1 tsp. shredded lemon peel (i used the dry kind from the store)
1 tbs. lemon juice
1 tsp Dijon mustard
1/2 tsp. sugar
1/4 tsp. salt
1 clove minced garlic (i used both fresh & the dry kind both worked well)
2 9 oz. packages refrigerated cheese tortellini
1/2 lb. asparagus spears, chopped
1/2 lb. broccoli tops, chopped
1 yellow and 1 red pepper (sweet), chopped
2 tbs. olive oil
4 green onions, sliced
In screw top jar, combine first six ingredients. Cover, shake well, refrigerate. In large saucepan, cook tortellini according to packages directions, adding chopped vegetables in the last minute of cooking time. drain and rinse. Toss tortellini-veggie mix with olive oil. Cover & refrigerate for 2 to 24 hours. Before serving, stir in onions & 1/4 cup Parm. cheese, if desired. Shake dressing & pour over all, tossing lightly to coat.
I did some substitutions, like adding olives instead of asparagus, no one, including myself, likes it. Also, today i tried it by not adding the veggies to the boiling water and it seemed to work better. I've gotten good responses from everyone. I hope you all do too!
