Prepare the pulp of apples as for a plain jelly. Boil the juice thus obtained for 20 minutes. To each pint of juice add one pound of sugar and place in a preserving kettle over the fire. Stir until all the sugar has mented, then add two or three rose geranium leaves, bring to the boiling point, and boil rapidly for two minutes, removing any scum which may rise to the surface. Turn into jelly glasses, removing the leaves, but place a fresh leaf in each glass.
