Prepare the pulp of apples as for a plain jelly. Boil the juice thus obtained for 20 minutes. To each pint of juice add one pound of sugar and place in a preserving kettle over the fire. Stir until all the sugar has mented, then add two or three rose geranium leaves, bring to the boiling point, and boil rapidly for two minutes, removing any scum which may rise to the surface. Turn into jelly glasses, removing the leaves, but place a fresh leaf in each glass.

I saw someone selling Rose Geranium Jelly when I went to visit my friend a few weeks ago. This local farm sells their goods at 2 of the rest areas on the NYS thruway, and one of the products was Rose Geranium Jelly. If I hadn't already bought the strawberry preserves, I would've bought that. I was very curious.
