Hi All,
I just found and tried this wonderful zucchini recipe. I'm always looking for new things to do with squash!
1 1/3 Cup (185 grams) flour
1 Cup (200 grams) sugar
1/2 Cup (112 grams) unsweetened cocoa powder
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 Cup (120 milliliters) light sour cream
1 large egg
2 tablespoons vegetable oil
2 teaspoons vanilla extract
1 1/2 Cups (340 grams) lightly packed shredded zucchini
Preheat the oven to 400 degrees F (200 C). In a large bowl, stir together the flour, sugar, cocoa, baking powder, bakin soda, and salt. In a small bowl mix the sour cream, egg, oil and vanilla. Add the zucchini (don't overmix). Stir the sour cream mixture carefully into the dry ingredients.
Fill each cup of a muffin pan three-fourths full with the batter. Bake for 20 minutes.
The recipe doesn't say you need to grease the pans, but I always do just in case!
