I have a great recipe for chocolate zucchini bread. If anyone is interested, I'd be more than happy to put on the website.

It's really, really good! Sort of like carrot cake.
Actually, I'll eat styrofoam if it was covered with chocolate! :eek: :D

OK! Here goes: CHOCOLATE ZUCCHINI BREAD
2 CUPS SUGAR
1 CUP OIL
2 TSP VANILLA
3 EGGS
3 CUPS GRATED ZUCCHINI
2 1/3 CUPS FLOR
1 TSP CINNAMON
2 TSP SALT
2 TSP BAKING SODA
1/4 TSP BAKING POWDER
1/2 CUP COCOA
1/2 CUP CHOPPED NUTS(OPTIONAL)
BEAT SUGAR, OIL, EGGS AND VANILLA. ADD ZUCCHINI AND MIX. THEN ADD DRY INGREDIENTS AND MIX WELL WITH BEATERS. POUR INTO TWO GREASED LOAF PANS AND BAKE FOR 45 MINUTES AT 350 DEGREES. HOPE YOU ALL ENJOY IT. I DO!!!

Zucchini bread is really very good. My sister has a similar recipe. It seems to make the cake very moist.
I like zucchini.

A friend gave me this *enormous* zucchini Wed, and I had to figure out what to do with it. So I made this bread. ( and a pound of pasta with zucchini and chicken LOL). You people have absolutely have to try it. It was so delicious, I mean really excellent! It was very easy too, my kids (2.5 and 5 yo) helped and we had a great messy time. :) Annie, thanks so much for posting this recipe, it is a keeper!

I tried it, it was very good!
The only thing is....(cough cough) I didn't stir it quite well enough...so uh....needless to say, with Baking Powder, and Baking Soda....I got the tell tale bitterness. :(
Okay, so I'm not the greatest cook...lol But in the mixed spots, it was very moist and good.

WONDERFUL RECIPE !!!
I added pecans instead of walnuts . it was gone in 10 minutes a work.... A+ recipe. thank ewe

I made this recipe over the weekend & it was a MAJOR hit!!! I also tried it replacing grated zucchiini with mashed bananas & it was excellent too. Very fast & very easy...even for the cooking-challenged people like me. :D
