Well, for starters there really is no info on 'eclectic' since it is not a spiritual path, but rather a way of describing a spiritual path, one that applies a great deal of variety. Hence, if you wish to refer to yourself as an eclectic Wiccan your best bet would be to study various cultures, religions, and spiritualities applying what you wish to your own life. You cannot really expect people to offer you information since they have no way of knowing what you want to know and your request is rather vague.

However, I feel I should point out that while there are a large number of eclectic Wiccans, most of them take eclecticism down a rather weird path, applying what they wish, ignoring the rest, which if you do that to such a degree you are no longer Wiccan, since Wicca is an organized religion.

First thing you should do is check out this thread. http://www.mysticwicks.com/showthread.php?t=52940

Learn everything you can about Wicca. I would also read books on mythology; ancient celt, norse, egyptian, greek, summerian, hindu, etc. Reading the Bible, or even the Koran wouldn't be a bad idea, either. Study herbs, stones, astrology, tarot, runes, pendulums, and so forth.

When you start to hit on some common themes that resonate with you, see if there is a bookstore near you that might teach classes, or a circle that does open rituals, if it possible for you to do so. http://www.witchvox.com/ is a great resource to see who is doing what in your area.

I started out with a general sense of wanting to be Wiccan, until I began my search for a patron god and goddess. When my goddess called to me, she wasn't celtic, egyptian or greek, the pantheons mentioned in most of the books I read. So I was forced to come up with my own path.

I follow a Wiccan ritual structure, observe the wheel of the year, but my goddess is Hindu. So being an eclectic, not only do I have to know my paganism, but I also have to know Hindu mythology, the belief structure, the country of origin, and at least some Hindu words in which to speak to my goddess. Also in honor of my goddess' country of origin, I study "puja," meditation, chakra therapy, and last of all, but not least, Hinduism itself. I can't just pick her out of a hat and not know what she stands for based on where she came from. Well, I didn't pick her, she picked me, but that's another thread.

So, by choosing the eclectic path, you need to be well studied in many different disciplines. This can be very challenging, since there is no one around to tell you if you are doing it right or not. Good luck to you, and keep the quesions coming. :)
