Ribs Take A Licking

Ribs and rubs. It's appropriate that only one letter separates
them -- when it comes to grilling, the two can go hand in hand.
A rub is a mixture of dry ground spices blended together, then
rubbed on meats, poultry or fish. There are myriad possibilities --
from mild or hot to sweet or smoky to many ethnic combinations.
Try this rub on your next slab of ribs. And when the ribs are
near done, brush them with barbecue sauce if desired.

SWEET AND SMOKY SPICE RUB

Ingredients:

1 tsp. salt
1 tsp. pepper
3 tbsps. brown sugar
2 tbsps. Hungarian paprika
2 tbsps. chili powder (or more to taste)
1 tsp. cumin
1 tsp. cayenne pepper
2 tsps. onion powder
1 tsp. garlic powder

Preparation:

In a small bowl combine all the rub ingredients.
To use, rub the mixture all over ribs. This is enough rub for 3
slabs of baby back ribs or 2 slabs of pork spare ribs.
Store the rub in an airtight container. Makes 1/2 cup.
Cook's note: Any variety of chili powder works well with this rub.
Try using ground Ancho or pasilla chili powders.
