Eclectic is where you follow a path, but pick up elements of other paths, traditions or beliefs and incorporate them into your practices.
Wicca itself is fairly eclectic because certain elements are based on a variety of sources. Some of the ritual material, for example draws from Leland's Aradia, Gospel of the Witches, and Crowley's Gnostic Mass, for example. Elements of freemasonry can also be found in Wiccan practice - the phrase "Merry meet, merry part and merry meet again" is based on a second degree freemason's greeting, IIRC.
Eclectic can also mean incorporating deities from different cultures into your practices as well, like the Greek Zeus and Norse Odin, for example.
Egyptian Wicca is where Egyptian deities are incorporated into Wiccan practice and ritual. If you compare this to Kemetic paths (which is a reconstruction of ancient Egyptian religion, if you like - called Kemetic because that's what the Egyptians called themselves, IIRC), the way in which the gods are worshipped and the rituals used will be very different.
There are a variety of traditions within Wicca - Gardnerian, Alexandrian, Seax, Georgian, etc. The differences might be in how formal or informal ritual might be; some traditions might work robed, or else skyclad (nekkid) etc. Or there are a variety of paths outside of Wicca - Druidry, Celtic Reconstruction, Asatru (and Norse traditional), Kemetic Orthodoxy, Dianic Paganism or Hellenic/Roman Reconstruction to name a few.
You don't have to belong to any of them, a lot of people make their own path too. If you browse through these forums, a lot of these paths are covered (and on witchvox), and a lot of them give some good websites to look at too.
I hope that makes some sense :)

The two main branches of Egyptian paths is Kemetic (full out reconstructionalism) and Tameran (similar to kemetic, but more ecclectic and relating more to the later periods of ancient Egypt).
I follow Tameran Ecclectic Wicca, though I was once on the Kemetic path. Eventually I just settled into something that suited me best. There are so many paths, its best that you settle into something that fits your lifestyle and personality. Read up on a few traditions, don't be afraid to ask questions, and you'll find the right one for you.
