So I have two potlucks to go to Monday and one on Tuesday and don't know what I am bringing to any of them yet.
Here is the info. I'll need to do most of the cooking tomorrow if possible.
#1 lunch at work about 25 people, microwave and fridge there, can also bring a crock pot.
#2 first pagan event I am going to in my area, I know there is about 40 people, and that is about all I know. It is at someone's home so I assume there is fridge, stove, but suspect they will be full. I am going to this straight from work.
#3 Yule celebration where I used to live, again going straight from work and driving 2 hours to get there. about 20 people, I can use anything in the kitchen. The host makes a ham and home brew.
Any thoughts. I am a decent cook and can think of some possibles, but I like to do nice things, and the challenges make it rough.
Has anyone ever done a Yule Log (the cake kind?) If so how difficult was it?

How porcupine meatballs? Can be done in crock pot or made up day before etc.
Can't help with the rest, i just have a major craving for porcupine meatballs!

I was thinking meatballs for that one too. What is porcupine meatballs though? just with rice added?
I have a cinnamon fruit salad I might do for the second one. Still stuck on what I can make way ahead, will sit at work all day, than travel well.

For the long trip one, do you have access to a fridge during the day, and an oven at the venue?
If so, you could make something, that you can prepare the day before (something that doesn't take long to cook) and then cook it when you get there - that makes it fresh, and it lasts longer.
I have a recipe for a tuna puff pastry, finger food thing.... that would work in that situation. I can also flick through my resources for you too!

My porcupine meatballs are normal meatball mix with capsicum (green peppers/bell peppers? ) pineapple, rice with tomato soup over the top. Very yummy and goes down well with everyone.

Annyka that is a great idea, and I actually have a chicken recipe that would work well with.

One thing that's easy and you can put in the fridge is what I call beer cheese. It's a lb of colby, 2 gloves of garlic, salt n peppers, 1 can of beer ---- put in food processor, refrigerate --- it'll become spreadable then....add crackers and a knife!

One thing that's easy and you can put in the fridge is what I call beer cheese. It's a lb of colby, 2 gloves of garlic, salt n peppers, 1 can of beer ---- put in food processor, refrigerate --- it'll become spreadable then....add crackers and a knife!

Here is a dessert idea, I make this for family gatherings, its easy and everyone seems to love it:
Eclair Cake
2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed
3 cups milk
1 (16 ounce) package graham cracker's (I use chocolate ones)
2 bottles of hard shell ice cream topping
In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk.
Arrange a single layer of graham cracker in the bottom of a 13x9 inch baking pan (I use a glass one). Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
Cover the whole cake with hard shell topping. Cover, and chill at least 4 hours before serving.

Bar b qued Smokies Take a crockpot and fill it with a package of cocktail smokies and bar b que sauce . Easy and no fuss. This is also great for Superbowl parties. You could also take Velveeta and Salsa and mix together in microwave and serve with Nacho Chips or fritos.

I love crock pots for pot lucks. I think of meatballs, chilli, or soup when I think of work things.
I also love corn bread, which has signifigance to a lot of pagans, with a can of cream and or whole corn mixed in with it. The cream corn helps the corn bread to stay moist in the holding process.
I just watched the recipe for a yule log cake and although it did nto look difficult I do not think it would work with your challenges.
