I usually hang my herbs in bunches or dry them in paper bags. My sister gave me a food dehydrator a few months ago & I thought I would try using that. It seems to work quite well, especially for the thicker roots & stems. For roots, I usually have to dry them in the oven since it would take a few weeks to air dry. The whole thing was done in a couple of hours. I was a bit concern about the herbs losing its potency at first. The pepermint dried in the dehydrator had a stronger aroma than my air-dried peppermint and was pretty tasty in the tea. I think this may be because the herbs lose less essential oils because of the faster drying time. Has anyone tried using a dehydrator & what do you think of it?

I hadn't thought of that. Hanging my head in shame I thought I used common sense ooops!
