A particular phase of the moon? At night? A particular day of the week? When the spirit takes you?? :D

When the spirit takes you?? would be my answer....I guess it would depend on the deity to whom you are planning to give the offering; however, any that I have ever done so with, always sorta let me know the time is right....like RIGHT NOW! LOL....

The appropriate time is when it feel right for you to do so.
What deity or force you are sacrificing to will also have its own correct time of sacrifice built in.

That's kinda what I was thinking, but I wanna do it right - I have something special I wanna do, I think I'll just do it when the moon is waxing & make it ceremonial, burn incense, etc.

I offer sacrafice when I am feeling selfish. It sort of opens me up and breaks me out of my selfish state. I also try to offer it on the waxing moon, and visualize it growing and becoming brighter as it moves out to do its work.
But I guess that is my long personal way of saying I do it when the spirit moves ME, so, I guess my advice is to do it when the spirit moves YOU.

And here's another smart-arse answer, but with a serious core.
When Alexander the Great lay dying, and the Macedonian army processed through his bedroom to pay their last respects a soldier asked him "When you die, and become a God, when should we sacrifice to you?", to which Alexander replied "When you are happy".
Trite one might say, but I would suggest also, cool as f*ck.
