Pastry for 2 crust pie
2 cups apples (chopped)
1/2 cup raisins
16 pecan halves, chopped
3 tbsp rum flavoring
Fruit mincemeat (recipe follows) To make your own fruit mincemeat: Combine
1/3 cup chopped nuts, 3/4 cup chopped apple, and 2 tsp rum flavoring.

Prepare pastry crusts. Line bottom of 8-inch pie pan. In large bowl, combine
fruit mincemeat, apples, raisins, and pecans. Stir in flavoring until well
mixed. Pour into crust. Roll out top crust, set over filling and flute crust
edge. Bake 30 minutes (until golden) at 350° F.

Mincemeat Pear Pile or Strudel

Serves 24, 102 calories per serving Ingredients:


3 C. MINCEMEAT
6 C. FIRM-RIPE ANJOU PEARS, CUT, SEEDED AND DICED
3 T. CREME SHERRY (OPTIONAL)
1 T. LEMON JUICE

30 WHOLE PHYLLO DOUGH SHEETS, FOLLOWING PACKAGE INSTRUCTIONS

1 OZ BUTTER-FLAVORED NONSTICK COOKING SPRAY

Combine all ingredients up to PHYLLO DOUGH
Layer phyllo dough sheets, spraying each sheet with butter spray and
brushing with juice from pear mixture.
FOR STRUDEL: Place pear mixture on long edge of phyllo dough] roll like a
jelly roll. Spray and brush top and cut 6 even slits in top.
FOR PIE: Layer 5 sheets in large pie dish, spraying and brushing as for the
strudel. Pour in pear mixture, fold in edges of dough and top with remaining
sheets of phyllo dough. Trim edges and/or turn them in. Cut slits in top to
form 8 or more servings.

NOTE: You can also make small individual rolls or turnovers. However, when
working with phyllo dough, be sure to keep it covered with plastic wrap and
a damp towel. It can be left overnight in this state.

Homemade Mincemeat

6 green tomatoes, chopped
6 tart apples, chopped
1 c currants
1 c raisins
3 ts ground cinnamon
1 ts ground cloves
1/2 ts allspice
1/2 ts ground ginger
1/4 c vinegar
1 tb grated orange peel
1/2 c unsweetened orange juice

Combine all ingredients in a large, heavy pot. Simmer until thick. Makes
about 3 quarts. Freeze mincemeat in one-cup portions.

Deviled Eggs

(mayonaise contains sugar or corn syrup)

eggs
2 oz cream cheese
2 tbsp milk
mustard
seasonings to taste


Mix the egg yolks with the above ingreadients. Put in the boiled eggs as normal. Season as you normally would.

Mayonnaise

1 egg
1 teaspoon salt
1 teaspoon sugar (or sugar substitute)
1 teaspoon mustard
1/2 teaspoon paprika
3 Tablespoons vinegar (or lemon juice)
1-1/2 cups salad oil (less if mixture thickens quickly)

Put first six ingredients in blender. Cover and switch the motor for just a
few seconds. Uncover and add salad oil gradually while the motor is running.
Blend until very thick and smooth. Refrigerate until used.

You can also leave out the cream cheese, if you're like me and can't do milk products. The milk isn't really necessary, either. Just mix the yolks with a bit of mustard, stuff into eggs and sprinkle with a bit of paprika. :D

Remember: Low Fat doesn't always mean "low sodium" and vice versa!

YOU CAN ALTER THE COOKING METHODS FOR LIGHTER LIVING:
Here are some tips...

* Grill meat or roast it on a rack so the fat can drip away.
* Steam vegetables.
* Saute using water, broth, wine or cooking spray.
* Try stir frying in chicken stock rather than oil.
* Brown meats, drain the excess fat by tilting the pan
and spooning it out (you can also use paper towels to
soak up the fat. After the fat is removed, rinse the
meat with water and then reheat it.
* Microwave foods rather than fry - you don't have to add
any fat or liquid during the cooking process.

Yvonne THANK YOU SOOOOOO MUCH!!!! My Dad (who I share a house with) is borderline diabetic. Thanks for the links & the recipe's.

There are some more dessert recipies for diabetics in the dessert thread. I will contunue to post the ones that look good and arrive in my mailbox. I am hoping that the different threads will make it easier for people to find the type of recipies they are looking for.

Guilt-free Brownies

Recipe By : Real Food for Real People

Amount Measure Ingredient -- Preparation Method

4 tablespoons Cocoa Powder -- unsweetened
1/4 cup Vegetable Oil
2 large Bananas -- ripe
1/2 cup Sugar -- or substitute
2 large Eggs
1 cup Whole Wheat Flour
1/2 cup Nuts -- chopped
1 teaspoon Powdered Sugar -- (garnish- optional)

Preheat oven to 350 degrees F. Combine cocoa powder, vegetable oil and
bananas in a food processor or blender. Puree until smooth; combine sugar,
eggs, flour and banana mixture in a large mixing bowl. Mix until blended,
then stir in the nuts. Pour the batter into a 9 x 13 inch baking pan
(prepared with non-stick cooking spray) and bake for 15-20 minutes or until
done. Toothpick inserted into center should come out clean. Cut into 24
squares when cool. Lightly sprinkle cooled brownies with powdered sugar
before serving.



*By replacing the sugar you can make this a diabetic recipe
