Apple or Applesauce Marmalade

2 oranges
2 lemons
1 quart cooked apple pulp orapplesauce
1/2 cup cider (water may be substituted)
4 1/2 cups sugar

Grind unpeeled oranges and lemons, remove seeds.
Combinewithcooked apples, cider (or water) and sugar.
Reduce heat and simmer, stirring frequently, until
desired consistency is reached (45-60 mins)
Ladle into sterilized hotjars, seal, and process in
boiling water bathfor5 minutes

makes four to five half pints

Red Pepper Marmalade

6 cups sweet red peppers
water
3 oranges, sliced
1 lemon, juice and grated rind
3 cups sugar
1/2 bottle liquid pectin

Wash,remove seeds, and chop or grind peppers. Simmer
in small amount of water until soft. Add orange
slices, lemon juiceandrind. Add sugar and bring
mixtureto a boil, stirring constantly. Remove from
heat. Add pectin, continue stirring for one
minute.Skim. Ladle into hot sterilized jars, seal,
and process for 5 minutes inboiling water bath
Makes four8-ounce jars

Red Raspberry Marmalade

2 oranges
2lemons
1/2 cup water
1/8 teaspoonbaking soda
4 cups raspberries
7 cups sugar
1 bottleliquid pectin

Grate the orange andlemon rinds, reserve
Juice the citrus fruit, chop pulp
Combine rind, water, and soda
Simmer 12-15 minutes
Addc hopped citrus pulp and juice
continue cooking 15 more minutes
crush berries and add to mixture
heat and mix thoroughly
add sugar and continue cooking gently until sugar is
dissolved
remove from heat
add pectin, stir and skim for oneminute
makes about five 8-ounce jars

no marmalade recipes handy, but do have this yummy one for biscuits!

~ Cheddar Cheese and Chive Biscuits ~

¼ cup fresh chives, chopped
2 cups Biscuit mix
¾ cup cheddar cheese, shredded
½ to 1 cup milk
2 Tbs milk for brushing tops of biscuits

Blend biscuit mix, cheese and chives together. Mix gently with milk
beginning with ½ cup and adding additional milk as needed to form a
soft ball. Turn onto floured board and gently knead 6 to 8 times. Roll
out ¾ inch thick and cut with biscuit cutter. Place on a lightly
greased baking sheet and brush tops with milk.
Bake at 450° for 10 minutes or until golden brown.
