I don't know whether I'm not having any dreams or just can't seem to remember them but, I can't recall the last time I had a dream. Does anyone have any suggestions or can someone tell my why it would be that I can't or don't dream?

I know that I do dream, but rarely recall them, unless they are really, REALLY significant. I find that I get a lot more from journeywork and meditation. Sometimes things like not waiting until you're exhausted to go to sleep, or drinking a lot of water in hopes that you'll be forced to awaken in the middle of the night and recall the dream you were having just prior to waking helps.

When you really want to remember your dreams and start writing them down, it seems that most people will naturally start remembering them. There are some free journal sheets here to get you started:

Write down any dreams you have as soon as you wake up - and try to remember if you had any dreams every morning even if you can't remember them
Tell yourself to remember dreams every night before you go to sleep

In Douglas Monroes book titled 21 Lessons of Merlin he wrote that Druids would take valerian and wild lettace to help them sleep and get to a deep level quick
You may not be remembering your dreams but you may not be reaching the deepest level of sleep
