    Sabbat and Seasonal Recipes

    People always seem to be looking for recipes for the Sabbaths and other seasonal get togethers so.... Here you go!

    Soft Pumpkin Cookies

    This is a recipe I found on the Internet a few years ago and it makes delicious, soft pumpkin pie tasting cookies.

    Ingredients:

    • 1 (16 ounces) can pumpkin, 2 cups
    • 4 1/2 cups all-purpose flour
    • 1 1/2 cups sugar
    • 1 cup light brown sugar, packed
    • 1 cup (8 ounces) butter, softened
    • 4 teaspoons baking powder
    • 2 teaspoons ground cinnamon
    • 1 teaspoon maple extract
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 1/2 teaspoon baking soda
    • 4 eggs
    • 1 cup pecan halves
    Directions:

    Into a large mixing bowl, measure all ingredients except pecans. With hand held mixer at low speed, beat ingredients until blended, scraping bowl occasionally. Increase mixer speed to medium and beat for 1 minute longer.
    Preheat oven to 350. Using 2 tablespoons of batter for each cookie, spoon batter into mounds on ungreased baking sheets, keeping mounds about 2 inches apart. Press a pecan half into the center of each cookie dough mound. Bake cookies for 18 to 20 minutes, until golden brown. Loosen cookies with spatula and move to wire rack to cool. Store in tightly covered container for up to 4 days. Freeze in portions, if desired.
    Makes 6 to 7 dozen cookies.

    I made those pumpkin cookies for Samhain last year and they are very good.

    Vegan Cornbread

    • 2 tablespoons of ground flax seed + 6 tablespoons of water (egg substitute)
    • 1 cup of all purpose flour
    • 1 cup of cornmeal
    • 1/4 cup of sugar
    • 4 teaspoons of baking powder
    • 3/4 tablespoon of salt
    • 1 cup of soymilk
    • 1/4 cup of oil

    Preheat oven to 425 F. Mix water with the flax seed in a separate bowl. In another bowl, combine flour, cornmeal, sugar, baking powder, and salt together. Then add the ground flax seed, soymilk, and oil to it. Stir well. Bake for 20-25 minutes.

    Seasonal Recipe (and coincidentally tonight's dinner): PUMPKIN SOUP

    1 can of pureed pumpkin
    1 can of chicken broth (or a few chicken bouillon cubes)
    1 can (use either the one from the pumpkin or the one from the broth) of milk, half & half, or heavy cream
    3 tablespoons of butter
    Salt and pepper, to taste
    Oyster crackers or saltines

    Mix everything except the crackers together in a sauce pan. Heat, stirring occasionally, until it just comes to a boil. Serve. Eat, with lots of crackers! Mmmm, food!
